Diderot. The Roquefort cheese was also
already particularly appreciated by
Casanova or Voltaire. |

The
natural cellars, dug in the cliff and fitted out
by the men form real subterranean cathedrals.
The cheese of Roquefort produced with a the milk
of the sheeps of the south Aveyron is protected
officially since 1925. It can be made only on
the site of Roquefort.
