THE SOUTH OF AVEYRON

Between Millau and Saint-Affrique, the village of
Roquefort is located on the side of the cliff of Combalou.

Quoted by the Roman historian Pline, it is sacred king of cheeses by frenchs philosophs so important before the French Revolution, Diderot. The Roquefort cheese was also already particularly appreciated by Casanova or Voltaire.
The natural cellars, dug in the cliff and fitted out by the men form real subterranean cathedrals. The cheese of Roquefort produced with a the milk of the sheeps of the south Aveyron is protected officially since 1925. It can be made only on the site of Roquefort.
