John,
Anne and their team will ensure that you enjoy
true French cuisine using only fresh local products
to create a typical Aveyronaise and Mediterranean
style menu.
The
hotel offers charming and comfortable rooms at
an extremely high standard. The hotel, formerly
a centuries old convent, has been lovingly and
thoughtfully restored, complete with secret garden
for guests to enjoy.
Settled
in the picturesque village of Saint-Rome de Tarn - famous
for its
mediaeval streets and renaissance architecture, the
village breathes history
as it was the centre of the infamous religious wars
between the Protestants
and Catholics during the 16th century.

Saint-Rome de Tarn boasts excellent access to the Tarn
river where you can hire a canoe kayak, sail or simply
bask in the superb yet tranquil scenery.
Other
places of interest include the Templar villages on the
Larzac plateau, the (ancient vestiges, dolmen, gallo
roman artwork of the Graufesenque site) when Millau
aera was the world's greatest producer of these works
during the time of the Roman Empire.
There is also the Museum of Skin and Glove, and perhaps
the most famous of all, the caves of Roquefort where,
of course, the King of all french cheeses is produced.
