> Paris-Bistro : Selection of good Aveyronnais Bistros in Paris
Au Petit Chavignol- Paris 75017

You won’t forget « Au petit Chavignol » !It has been awarded the « Bouteille d’or 2003 » (Golden bottle) trophy, which rewards the best « bistros » offering the best small producers wines. And, as a matter of fact, the « Petit Chavignol » proves to be one of the best places in the 17th arrondissement of Paris.

This « Golden bottle » award couldn’t have been given to a better place, since the « Petit Chavignol » stands as one of those restaurants without whom Paris wouldn’t be Paris. A Paris that still resists the invaders – no Romans anymore, but fast-food restaurants, clothes stores and shopping malls…

The french capital, the french culture, remain to true to themselves thanks to people like Bernard Roque-Bouges, who respect tradition while looking into the future. And in matters of cooking, know how to marry deep-down country material with brand new flavours.
The blackboard in front of the window reads it loud and proud : you’ll find real « Salade rouergate » here ! No better proof that the « Petit Chavignol » really is what it pretends to be – a cosy little bistro where you can feel at home. No big time service, no stiff-upper-lip waiters either… This is a place where the mythical social melting-pot is being cooked together with some of the best Aveyron food around !

Quite oddly, you wouldn’t guess at first sight that the patron comes from Laguiole : his retaurant actually looks more like a « Bouchon lyonnais » (« Bouchon », which really means cork, being the Lyon area word for « bistro »), complete with vine stocks all around – and a wide list of local wines where south-western France is barely represented, if not for Marcillac.
As soon as Bernard Roque-Bouges bought the place, back in 2002, he tried to give it a more Aveyron-country style. Putting the decoration aside at first, he started with the meals, including the famous « Tripoux de Naucelle » with the traditional steamed potatoes. You’ll also find all kinds of sausages, dry, boiled, whatever, which are heart and soul of Aveyron cooking. The choice of cheeses ranges from 6 and 18 months old « Fourmes de Laguiole » of course down-home « Roquefort ». The very name of the house shouldn’t be forgotten, and you’ll have to try some « Crottin de Chavignol» ( delicious sheep cheese).

The service will be just as cool and relaxed - and able, too – as you may wish, while both Mrs and Mr Roque-Bouges will be at hand to help you make your meal a success !
