The Franklin Café is like the prow of a ship which would sink to Passy,the heart of the 16th Arrondissement of Paris. His helmsman Thierry Borrel, is a native of north Aveyron.
Before taking the direction of this beautiful Parisian brasserie, Thierry was in charge of others cafés for exemple in la Defense the business center or in Paris 15In his Franklin Café, Thierry is working with his family. Sophie, his wife is in charge of the daily and administrative files. His son is working in contact with clients.

Sophie Borrel has designed the stylish and contemporary decoration of the Franklin Café. A perfect frame for an cooking as eclectic as was spirit of the first American ambassador to Paris, Benjamin Franklinfor to whom the cafe is dedicated.

In Franklin Café, you can eat many things hot or cold, from noon to midnight. For example a soup season (6.5 €) or the onion soup, the traditional recipe of the true Parisian Brasserie. But you can also taste Lyons sausage with pistachios (8.5 €).
For those who are fond of ocean flavours, there is a large selection of oysters, among the best de-France. As for example, la "fine de Claire" of Marennes Oléron No. 2 and No. 4 or the "Gillardeau oyster" N° 1 without
forgetting delicious shrimps.
And you can stay in the sea by choosing a back salmon pesto prepared by the Chief of Franklinwho take its inspiration in mediterranean sea. There is also some St. Jacques shells prepared in a Provencal way and served with a vegetable flan.
But of course, you'll find in the Franklin Café all the dishes wich make a genuine parisian brasserie. Begining by the best flavours of the South West of France like duck foie gras or famous confits (preserves) of breast of duck. In the same spirit, there is a wonderful steak tartare (13€) served with French fries. And of course, for finish your meal, a good selection of Parisians Desserts is waiting for you.
