Should
you be passing through the Lot valley between the
most beautiful villages of Estaing and Saint-Côme
of Olt, stop for a gastronomic pause at Le Manoir
Alexandre on the edge of Espalion. This authentic
Aveyronais etablishment has a special reputation for
duck foie gras. It is also famous for products based
on a combination of foie gras and regional country
dishes which are known as the best flavoured in the
South West of France.
Le Manoir Alexandre has built its reputation
with one particular dish - quail stuffed with foie
gras. This is the Trojan horse of this palace of gastronomy
and is exclusive to this establishment. The quail
is partly boned, stuffed with foie gras and covered
with Port jelly. It is cut in half lenthwise and eaten
cold on toast.
Le
Manoir Alexandre has became one of the most well-known
enterprises for the quality of its foie gras.
Here, the strictest rules of origin, quality and hygiene
are adhered to. Livers of Mallard ducks are provided
by six producers who keep most rigorous records of
the source of each liver and the high hygiene standards
adhered to. This results in the high quality taste
and flavour of the fois gras.
Le
Manoir Alexandre has been awarded a gold medal for
its semi-cooked pasteurised lobe of fat liver of whole
duck and a silver medal for its fat liver of whole
duck by the Concours Général Agricole
du Salon de lagriculture of 2003.
The Manoir has all types of fois gras but there are
also other dishes prepared with the same attention
to quality and respect for the countryside. Of course
duck is served with all the usual sauces. There are
confits (preserves) of breast and thigh of duck; magret
- stuffed breast; cassoulet (stew with beans). Also,
not to be missed, is goose gizzards stuffed with duck
fois gras. The Manoir has not forgotten its Aveyronnais
backgound - serving stuffed cabbage and tripous(tripe)
and also offers a selection of the famous wines of
the Lot.
One little bit of advice: do not miss the chance of
a canoe trip or a swim in the river before visiting
the Manoir shop.
