Le Rez-de-Chaussée is an attractive restaurant , bright and warm, that stands out in the heterogenous neighbourhood of the Saint Ouen flea market. Just the right place to recover after hunting for antiques in the side streets of the flea market or after battling with the ascent of Montmartre.
From a distance , the « boss » looks like Jean-Pierre Bacri, a
well-known French actor. Close up, Thierry Cayla smiles more... Grandson of a wine grower from the Marcillac valley he made a detour via Toulouse before starting his career in the hotel industry, from the Sofitel Hotel in the old harbour of Marseille, to the Holiday Inn in Paris via Fouquet's. He has a MBA in food-processing and knows all there is to know about management methods and all the standards involved in food manufacturing.


With this restaurant, Le Rez-de-Chaussée, Thierry Cayla has decided to turn his back on mass-produced food and to launch into the personal experience and remarkable destiny of those men and women whose profession is to feed their contemporary fellows while providing special places equipped with a soul. Special as this old restaurant in the rue Letort which Thierry Cayla, who has lived in the neighbourhood for about twenty years, bought last summer in 2003. He has totally renovated the place and revealed plaster mouldings and old frescos on a part of the ceiling. From the depths of his cellar, he excavated a chandelier and bistro chairs from the forties in Thonet stylewhich give the place a sheen of genuine quality. As a result, it is elegant witout being over
formed.


Thierry Cayla represents his whole region in his dishes: Savy Tripous (stuffed tripe), bio chicken from the Aveyron with mushrooms, paté, ham and dried sausages from Conquet and, above all, duck fillets and confit from la Quercynoise and lentils from le Puy. Every day, sausages are served with Aligot, a typical potato dish from the region of Aveyron, as well as penne (Italian pasta) with fresh basil and tomato, and also angler fish with an orange velouté sauce, just to show that he is not
sectarian.
As for his wines, besides the vintage ones from Marcillac co-op, you
will discover little-known regional wines from Gaillac or Languedoc.
From time to time, Thierry Cayla adds a surprise to his menu. So, don't hesitate, go and be surprised by Le Rez-de-Chaussée !.
